orange bliss

I made sweet potato fries on three separate occasions last week. So I decided to mix things up.

With a peeled and cubed sweet potato lightly tossed in olive oil and roasting in the oven for ~40 minutes, I warmed up some coconut milk (3/4 cup) and squeezed out half a mineola orange.

I mashed the finished sweet potato, stirred in the milk and orange juice, and added a sprinkling of coarse sea salt. So easy. So good.
